Easy Enchiladas

OK, fair warning now. I am not a cook! And if I ever do cook, I prefer the recipes with 5 ingredients or less as many more than that would probably get lost in translation to me.

So, if you are a prize-winning chef, I'd just stop reading now. Spare yourself the agony. The elementariness of this recipe very well might offend your cooking knowledge.

However, for those of you out there like me who like to do quick, easy, and relatively healthy meals, this is for you. I made these for my Grandmother's 87th birthday and they were a hit. It's a fun change from the usual enchiladas.

BBQ Chicken Enchiladas

  • chicken (as much as you might need for your family) (two breasts made plenty for 8 enchiladas for me)
  • whole wheat tortillas
  • lowfat mild cheddar cheese
  • Sweet Baby Rays Barbecue Sauce (or your favorite bbq sauce, but I prefer Sweet Baby Rays as it is sweet and tangy)
  • Lite Sour Cream
  • Salt and pepper
  1. Preheat oven to 350
  2. Cook your chicken, season with salt and pepper, and shred 
  3. Lay tortillas in cooking dish and fill with 1/2 cup or so of shredded chicken
  4. Sprinkle with shredded cheese
  5. Squirt BBQ sauce lightly on top of cheese
  6. Roll tortillas and lay face down  with folds at bottom to keep closed
  7. Cover tops of tortillas with shredded cheese followed by BBQ sauce
  8. Put in oven for 15 minutes or until cheese is well melted
  9. Remove from oven to serve hot
  10. Serve with dollop of sour cream
